Mat picked Dakota and I up from the St. John ferry landing on a Friday afternoon. I found St. John Catering via Jenn Johnson an event planner/designer on St. Thomas only 12 hours before and somehow Mat managed to squeeze us in for a tasting. As soon as Jenn heard about our vision for the wedding she insisted Mat would be the man for the job. And boy did he not disappoint! He blew every other caterer we met with out of the water!
Once we arrived, the entire staff made time to come introduce themselves and get to know us. Mat whipped up fresh mojitos with mint from their garden and they presented two courses plus dessert; completely blowing us away. We toured the kitchen, learned about Mat’s homemade kumbotcha and listened as they detailed their cooking style. One thing was for sure, they lived for going above and beyond and serving up interesting fusion cuisine.
When Dakota couldn't hide his quiet enthusiasm, I knew this was the team we were hiring. While photography is clearly the number one on my wedding priority list, an amazing, memorable dining experience is at the top of Dakota’s. He comes from a family of foodies and we want to cater to their eclectic taste.
Mat is known locally for his full moon dinners. While he mostly caters events, once a month he hosts an evening of fine dining and shares new dishes during each full moon. We love it. Is it December yet?
